Ingredients

  • Ingredients:
  • 3.5 lb seedless watermelon, rind sliced off and coarsely chopped
  • ½ cup caster sugar
  • 2 tsp fresh lime juice

Instructions

  2. Place sugar in a medium heavy-bottomed saucepan and pour a cup of cold water into it.
  3. Cook over slow flame for 4 minutes, stirring often, until the sugar dissolves completely.
  4. Throw in the watermelon chunks and bring the mixture to a boil over high heat.
  5. Reduce it back to a simmer and continue to cook likewise for 5 minutes.
  6. Turn off the heat and keep aside for 10 minutes to allow the flavors to mature.
  7. Tip the mixture into a food processor and blitz into a smooth puree.
  8. Pass it through a fine mesh sieve into a large jug and get rid of the solids.
  9. Splash in little lime juice and stir into the strained mixture to mix well.
  10. Transfer the mixture into a slice pan with the base of 18cmx28 cm.
  11. Leave in the freezer for at least 3 hours or until set and break the frozen mixture with a fork into smaller ice crystals.
  12. Wrap the surface of the pan with a piece of aluminum foil and return it back into the freezer for another 4 hours.
  13. Make sure to tease the mixture as instructed above, every hour to attain the ideal grainy texture a perfect granita.
  14. Spoon heaping tbsps of granita into serving bowls and place a sprig of basil to garnish.
  15. Serve chilled and beat the heat!
