Duck Legs and Pineapple Curry
Ingredients
- • 6 duck legs
- • 4 tablespoons of red curry paste
- • 6 kaffir limes
- • 1 small pineapple, cut into chunks
- • 1 small red chili, sliced
- • 1 cup of water
- • 2 tablespoons of brown sugar
- • 1 cup of coconut milk
- • 2 tablespoons of fish sauce
- • Black pepper
- • Salt
Instructions
- Combine the duck legs with water, kaffir limes, red curry paste, brown sugar, fish sauce and red chili in a slow cooker then season them with some salt and pepper.
- Cover the pot and cook them for 3 h on low then stir in the rest of the pineapples and cook them for 1 h on low.
- Once the time is up, stir in the coconut milk and simmer it for 15 min then serve it warm and enjoy.
