Fruit Pizza - Summer Dessert Recipe
Ingredients

- For the sugar cookie crust:
- 1 ½ cups all-purpose flour
- ½ tsp baking soda
- 1 tsp baking powder
- 1 tsp vanilla extract
- ¾ cup granulated sugar
- 1 ½ tsp cornstarch
- 1 egg, at room temperature
- ¼ tsp salt
- ½ cup unsalted butter, softened
- For the topping:
- Assorted fresh fruits, sliced
- 8 oz cream cheese, softened
- 2 cups icing sugar
- ¼ cup unsalted butter, softened
- 1 tsp vanilla extract
- 1 tbsp heavy cream
- 1 tsp pure vanilla extract
Instructions
- Instructions:
- For the crust, beat the softened butter in a large bowl with an electric mixer, equipped with a paddle attachment, for a minute at moderate speed.
- Once smooth, add the sugar and continue to beat them together until fluffy.
- Crack the egg into the mixture and beat it into the mixture followed by a dash of vanilla extract until evenly incorporated.
- Combine the dry ingredients in a medium bowl and add them gradually into the wet mixture,
- folding them together at low speed after each addition until they form dough.
- Wrap the dough with a cling film and refrigerate for half an hour to chill.
- Meanwhile, turn on the oven and preheat to 350 degrees F.
- Grease a 12’’ round pizza pan with cooking spray and keep aside.
- Peel off the cling film from the dough and place it onto the greased pan.
- Press it into a flat circle and spread it towards the edges of the pan.
- Bake for 20 minutes or until the edges brown slightly and remove from oven; let it stand until the crust cools to room temperature.
- While the crust cools, chop up the fruits and start preparing the sweet spread for the pizza.
- For that, beat the butter and cream in a medium bowl with an electric mixer at medium speed for a couple of minutes or until smooth.
- Beat in icing sugar along with heavy cream and beat further for additional 2 minutes.
- Stir in vanilla extract and splash in more cream to loosen it slightly if necessary.
- Slather it in a thick layer onto the cooled crust and arrange the fruit slices in concentric fashion until all the fruits are used up.
- Let it stand for a while to allow the sauce to set and carve out thick wedges.
- Serve and enjoy!
