Fruit Pizza - Summer Dessert Recipe

Ingredients

  • For the sugar cookie crust:
  • 1 ½ cups all-purpose flour
  • ½ tsp baking soda
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • ¾ cup granulated sugar
  • 1 ½ tsp cornstarch
  • 1 egg, at room temperature
  • ¼ tsp salt
  • ½ cup unsalted butter, softened
  • For the topping:
  • Assorted fresh fruits, sliced
  • 8 oz cream cheese, softened
  • 2 cups icing sugar
  • ¼ cup unsalted butter, softened
  • 1 tsp vanilla extract
  • 1 tbsp heavy cream
  • 1 tsp pure vanilla extract

Instructions

  2. For the crust, beat the softened butter in a large bowl with an electric mixer, equipped with a paddle attachment, for a minute at moderate speed.
  3. Once smooth, add the sugar and continue to beat them together until fluffy.
  4. Crack the egg into the mixture and beat it into the mixture followed by a dash of vanilla extract until evenly incorporated.
  5. Combine the dry ingredients in a medium bowl and add them gradually into the wet mixture,
  6. folding them together at low speed after each addition until they form dough.
  7. Wrap the dough with a cling film and refrigerate for half an hour to chill.
  8. Meanwhile, turn on the oven and preheat to 350 degrees F.
  9. Grease a 12’’ round pizza pan with cooking spray and keep aside.
  10. Peel off the cling film from the dough and place it onto the greased pan.
  11. Press it into a flat circle and spread it towards the edges of the pan.
  12. Bake for 20 minutes or until the edges brown slightly and remove from oven; let it stand until the crust cools to room temperature.
  13. While the crust cools, chop up the fruits and start preparing the sweet spread for the pizza.
  14. For that, beat the butter and cream in a medium bowl with an electric mixer at medium speed for a couple of minutes or until smooth.
  15. Beat in icing sugar along with heavy cream and beat further for additional 2 minutes.
  16. Stir in vanilla extract and splash in more cream to loosen it slightly if necessary.
  17. Slather it in a thick layer onto the cooled crust and arrange the fruit slices in concentric fashion until all the fruits are used up.
  18. Let it stand for a while to allow the sauce to set and carve out thick wedges.
  19. Serve and enjoy!
