Sweet and sour cherry preserve

- 4 cups sweet cherries, pitted
- 5 cups sour cherries, pitted
- 2 lemons, zest grated and juiced
- 3 cups granulated sugar
- 3 tsp Pectin
- 3 tsp calcium water
Instructions
- Instructions:
- Toss the cherries into a large pan and pour in ½ cup water, calcium water and freshly squeezed lemon juice.
- Place a lid on top and heat over gentle flame until it starts boiling.
- Reduce to a simmer and cook for 10 minutes, stirring often, until the cherries turns mushy and release their juices.
- Toss the sugar and grated lemon zest in a bowl and whisk in pectin to mix thoroughly.
- Blend this mixture into the cooked cherries and bring the final mix back to a boil.
- Continue to do so for 5 minutes or until it turn considerably thicker.
- Turn off the heat and keep aside.
- Divide the prepared jam among 7-8 half-pint Mason jars in boiling water bath and put the lid on.
- Process for 10 minutes and lift them up onto a kitchen towel; keep aside to cool.
- Check the seal of each jar and store the jam in them for as long as one year at room temperature.
- Slather the on bread toasts or enjoy it desserts!
