- 3.5 lb seedless watermelon, rind sliced off and coarsely chopped
- ½ cup caster sugar
- 2 tsp fresh lime juice

- Place sugar in a medium heavy-bottomed saucepan and pour a cup of cold water into it.
- Cook over slow flame for 4 minutes, stirring often, until the sugar dissolves completely.
- Throw in the watermelon chunks and bring the mixture to a boil over high heat.
- Reduce it back to a simmer and continue to cook likewise for 5 minutes.
- Turn off the heat and keep aside for 10 minutes to allow the flavors to mature.
- Tip the mixture into a food processor and blitz into a smooth puree.
- Pass it through a fine mesh sieve into a large jug and get rid of the solids.
- Splash in little lime juice and stir into the strained mixture to mix well.
- Transfer the mixture into a slice pan with the base of 18cmx28 cm.
- Leave in the freezer for at least 3 hours or until set and break the frozen mixture with a fork into smaller ice crystals.
- Wrap the surface of the pan with a piece of aluminum foil and return it back into the freezer for another 4 hours.
- Make sure to tease the mixture as instructed above, every hour to attain the ideal grainy texture a perfect granita.
- Spoon heaping tbsps of granita into serving bowls and place a sprig of basil to garnish.
- Serve chilled and beat the heat!
