BBQ pomegranate Tofu (Vegan BBQ)

Ingredients

  • BBQ pomegranate sauce (vegan BBQ)

  • Ingredients:
  • 14 oz extra-firm tofu, drained and pressed
  • 4 garlic cloves, minced
  • 2 shallots, minced
  • 6 oz tomato paste
  • 2 tbsp pomegranate molasses
  • 3 tbsp tamari
  • ¼ cup maple syrup
  • 2 tbsp peanut butter
  • 2 cups water
  • 3 tbsp peanut oil
  • 2 tsp liquid smoke
  • 1 tsp Sriracha sauce
  • ½ tsp five spice powder
  • 2 tsp no-chicken soup base

Instructions

  2. Warm up your oven to 350 degrees F. slice the tofu into 8 pieces and arrange them in a 9’’x13’’ baking pan.
  3. Drizzle a couple of tbsp peanut oil over them and smother them with a tbsp of tamari.
  4. Flip the tofu chunks to coat either side and pop into the oven to bake for 15 minutes.
  5. Turn them over and bake for another 15 minutes or until they are golden brown.
  6. Meanwhile, heat the remaining peanut oil in a skillet over medium flame and spoon the minced shallots into it.
  7. Sauté for 5 minutes, stirring occasionally, and stir in minced garlic.
  8. Sprinkle five-spice powder on top and continue to sauté for another minute.
  9. Empty 2 cups water into a pot and crumble the soup base into it.
  10. Stir until it dissolves and cook until the mixture starts simmering.
  11. Blend in the remaining ingredients and continue to cook the mixture until it starts boiling.
  12. Reduce it to a simmer over gentle flam and continue to cook likewise for 15 minutes, stirring every now and then.
  13. Pour this sauce over the baked tofu, coating them nicely and return the pan back into the oven to bake for 15 more minutes.
  14. Once ready, place two slices of BBQ tofu on each serving plate and serve warm with grilled veggies.
